So, I got home after work the other night pretty late and I was so so hungry! Had a great idea for a super quick dinner, which was also really tasty!
Here's the recipe...
2 Sea Bass Fillets (you can use any fish you like here, but I find it works best with sea bass, lemon sole or plaice)
1 tin cooked green lentils
1/2 a lemon
1 tsp sugar
1 tsp golden syrup or honey
salt and pepper to taste
To be honest there isn't a real method here, just cook and assemble but I will go through it in any case :)

- Preheat the grill to high and place your sea bass on the grill pan skin side down. Add salt and pepper if you like here
- rinse and drain the lentils and add to a sauce pan with a good squeeze of lemon, black pepper and the sugar
- cook the sea bass for around 2-3 minutes on the first side (depending on thickness - maybe more if necessary)
- turn the fish over and drizzle with the honey/golden syrup and season again
- continue stirring the lentils gently - were only warming them through here as they are already cooked.
- once the fish is cooked and crisp on the skin side, bring it out of the grill
- add the lentils to the plate and then place the fish on top. Give it a final squeeze of lemon and a good grinding of pepper.
