Oh dairy how I love you! It's a struggle to try and cut dairy out of your life and I'm the first to admit that!
I haven't managed yet to completely cut it out and to be honest I don't think that I ever will or would want to cut it out forever either! However, I have significantly reduced the amount of diary I have in my diet and the first step that I took was replacing it with almond milk! I then started reading labels on boxes and realised some of them are full of so much junk and chemicals! I was quite surprised, especially the amount of sugar some of them have in! So, you know me - I decided to make my own!
Wow! what a revelation! It tastes different and it even looks different!
I now use dairy-free milks to replace milk in lots of things including pancakes, smoothies, omelettes and porridge. For the times that I need to use milk more for the flavour e.g. in porridge, I use around a 70/30 ratio of almond milk to dairy milk so I can still get that creamy taste without too much dairy in my diet, oh and in a brew? Of course it's proper milk! No contest right!
Then we come to my new addition.... Oat milk! This is great! It takes 30 mins to soak (instead of overnight) and it's so much creamier too! I use oat milk in the same way I use almond milk and have found it pretty much the same. Here are my recipes...

Ingredients
- 1 cup almonds soaked overnight in 3 cups of water
- 3 cups of mineral water/filtered water
Method
- Simply rinse the soaked almonds really well and then you can make your milk. This can be done in 2 ways...
- The way I make it is by using my Hurom cold-pressed juicer. I add handfuls of soaked nuts and pour water into the funnel at the same time. Then drain it through a sieve - Ta Dah! Done!
- The other method is by blitzing your soaked nuts and fresh water in a blender and then draining the milk through a nut milk bag. This is still pretty quick too but just a bit messier.
- Then store in an airtight container for up to 5 days.
