RECIPE: Puffy Apple Slice

Do you get the impression I don't know what to call this...??? Yeh, I don't ha ha! I know it has a proper name somewhere, but as I kind of made it up as I went along, I didn't want to use it's formal name and not use the right ingredients... Anyhoo, here is the recipe for this slightly naughty, but ever so delicious dessert...



Ingredients:
  • 1 x Roll of pre made puff pastry
  • 2 x Royal Gala Apples (or which ever you prefer - the sweeter the better really)
  • 2-3 Tbsp Coconut Sugar
  • 1/2 Tsp Ground Cinnamon
  • 1 x Egg (beaten)
  • Honey to drizzle over
Method:
  • Preheat the oven to 200-225 degrees
  • Make sure your pasty has been out of the fridge for around 10 mins so it is not 'fridge cold'
  • Peel, core and slice your apples into thin slices (approx the same thickness)
  • Mix the sugar and cinnamon together in a small bowl first
  • In a large bowl, add the apples and then sprinkle over the sugar and cinnamon mix and mix well
  • Unroll the pastry (if it is on baking paper already then just use this, otherwise line your baking tray first) and pop in on the baking tray
  • Arrange the apples on the pastry leaving a couple of centimetres around the edge
  • Score a frame on the pastry around the apples so it can rise up with a sharp knife
  • Brush the 'frame' of the pastry with beaten egg and add a sprinkle of coconut sugar over the top
  • Bake for around 20-25 minutes or until puffed up and golden brown
  • Bring out of the oven and allow to cool slightly before serving.
  • Drizzle with a little honey (or vegan alternative if you prefer) and serve with ice cream or custard
