Ingredients:
(serves 2)
- 2 slices of sourdough bread
- handful of plum/cherry tomatoes
- 1 large avocado
- olive oil to drizzle
- 1 tsp chilli oil
- shop bought crispy onions
- Balsamic glaze
- salt and pepper
Method:
- Put the bread under the grill to toast the first side, while this is toasting, chop the tomatoes into quarters
- Put them in a bowl with the chilli oil, salt and pepper and give a good stir
- Check the toast, when brown on one side, remove from the grill and on the uncooked side, drizzle with some good quality olive oil and give a sprinkle of sea salt. Put back under the grill.
- Whilst the toast is cooking the other side, slice the avocado ready to assemble on to the toast
- When the toast is done, lay on the sliced avocado, add the tomatoes on top with some crispy onions and a drizzle of balsamic glaze. Grind some black pepper on top to finish!
- Apply to face! ha ha!
