MEATLESS MONDAYS: Avocado and Tomato Toast

I love this so so much! I could actually eat it for breakfast, lunch and dinner! This is an extra special one though by the way I toast my bread - plus it's super tasty sourdough! Delicious!


Ingredients:
(serves 2)

  • 2 slices of sourdough bread
  • handful of plum/cherry tomatoes
  • 1 large avocado
  • olive oil to drizzle
  • 1 tsp chilli oil
  • shop bought crispy onions
  • Balsamic glaze
  • salt and pepper



Method:

  • Put the bread under the grill to toast the first side, while this is toasting, chop the tomatoes into quarters
  • Put them in a bowl with the chilli oil, salt and pepper and give a good stir
  • Check the toast, when brown on one side, remove from the grill and on the uncooked side, drizzle with some good quality olive oil and give a sprinkle of sea salt. Put back under the grill.
  • Whilst the toast is cooking the other side, slice the avocado ready to assemble on to the toast
  • When the toast is done, lay on the sliced avocado, add the tomatoes on top with some crispy onions and a drizzle of balsamic glaze. Grind some black pepper on top to finish!
  • Apply to face! ha ha!
